You know the drill. Child begs for bananas. You buy a bunch. Child eats one, then refuses to eat the rest. But I thought you wanted bananas? I don’t like bananas!
So you’ve got rotting black banana flavored snot on your kitchen counter. Do you scrape it off with a spoon and throw it in the garbage? Eat it when no one is looking? No, damn it!
Make banana muffins. Children can’t resist that cute little muffin shape any more than I can resist pinching their cheeks.
I use this reduced sugar, partial whole wheat recipe. Works great. For adults too!
1/3 cup butter
1/2 cup sugar
1 tsp vanilla
3 ripe bananas mashed
pinch of salt
1 cup white flour
1/2 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
Soften butter in microwave. Cream butter and sugar together. Add wet ingredients. Mix well. Add dry ingredients. Grease muffin tins.
Bake at 350°F for about 24 minutes.
